Ingredients for making Ghevar:
To make Ghevar batter, you need half cup desi ghee, 1 big bowl of ice frozen, 2 cups flour, half cup cold milk, 3 cups cold water, 1 teaspoon lemon juice. To make syrup, 1 cup of sugar and half a cup of water is required. Ghee is required for frying and dry fruits, mawa, cardamom and silver work is required for decorating.
Easy recipe to make Ghevar:
First step- First of all, take melted ghee in a bowl and add ice to it and start rubbing it. Now keep rubbing the ghee until it becomes like cream. By doing this for about 5-6 minutes, ghee will become white cream.
Second step-Now filter the flour in it and mix and add cold milk. We have to prepare a diluted mixture from it. Now to make batter, keep adding cold water and beating it with a beater. You have to become a thin batter.
Third Step- Now keep stirring the batter with the help of a whisk and mix the lemon juice. You have to keep whisking it continuously and use only cold water from the fridge.
Fourth Step- Now take a pan or high-sided pan and heat ghee in it. Now add a little about 2 teaspoons of batter in the middle and then continue to add the batter 10-15 times in the same manner, little by little.
Fifth step – When a light round circle is formed, make a hole in the middle with the help of a knife and bake it until it turns golden. You have to pour the batter from above so that it does not sit at the bottom and a mesh-like shape starts forming on top. With the help of a knife, remove the ghevar from the side and remove the ghevar by inserting a knife in the middle.
Sixth step- Now prepare the syrup by mixing sugar and water in the pan and boil for 5 minutes. Now keep the ghevar in a plate and add syrup on top. Ghevar should be thoroughly immersed with syrup.
Seventh Step – Now blend the mawa with a spoon and if you want, add 1-2 spoons of milk to make it like cream. Now spread it well on the entire ghevar and apply favorite dry fruits on top. Also add some cardamom powder on top of it.
Eighth Step – Apply silver work and serve ghevar. If you want, you can also add saffron milk to mawa and make it yellow in colour. This homemade ghevar will look so tasty that you will lick it all in one go.
