Recipe to make Kalakand Sweet
Step 1 – For this, put 1 1/2 liter of milk to boil on gas. Keep in mind that to make Kalakand we have to use full cream milk. We have to tear it and prepare chhena.
Step 2-Take 2 teaspoons of lemon juice or 2 teaspoons of vinegar in a cup of water and prepare a solution. Now pour this solution into hot milk and tear the entire milk thoroughly. When the milk curdles, filter it through a filter and separate the chhena.
Step 3– Wash the chhena 1-2 times with clean water and then add the chhena to a cotton scarf or cloth and let it cool. Now the chhena has to be mashed well. Mash the chhena with a potato masher or with a folk.
Step 4 – Now put half a liter of milk to heat on another gas. We have to cook this milk while stirring until it thickens. Add half a cup of sugar at a time and let the milk boil again. If you like sweets more then add whole sugar in milk.
Step 5 – Now add prepared chhena to this thick milk and mix it. Raise the flame of the gas and keep stirring the entire mixture continuously. Cook it on high flame for about 5-7 minutes when you feel that everything is well mixed and not sticking down, turn off the gas.
Step 6 – Now spread this mixture in a big square box or something higher than the edge. Add any dry fruit clippings on top of it. By the way, green pistachios look very good in Kalakand.
Step 7 – If you want to cool the fondant, keep it in the refrigerator to set. After this, cut the Kalakand into pieces and then take out each piece of it.
