Aloo-Matar’s crispy shortbread tastes delicious in winter, prepare it quickly with this easy recipe

Ingredients for making potato-pea shortbread
For flour:
1. 2 cups wheat flour
2. 2 tbsp desi ghee
3. 1/2 teaspoon celery
4. Salt as per taste
5. Water (for kneading dough)

For stuffing:
1. 2 large potatoes (boiled and mashed)
2. 1 cup peas (boiled)
3. 1 tsp asafoetida
4. 1/2 teaspoon turmeric powder
5. 1/2 teaspoon coriander powder
6. 1/4 teaspoon red chilli powder
7. 1/4 teaspoon garam masala
8. Salt as per taste
9. Coriander (finely chopped)
10. Oil (for frying)

Method of making potato-pea shortbread
1. First of all, add flour, ghee, celery and salt in a big bowl and mix well.
2. Slowly add water and knead a soft dough.
3. Cover the dough and leave it for 30 minutes.
4. Now heat oil in a pan and add asafoetida in it.
5. Put boiled potatoes and peas in a pan and mix well.
6. Add turmeric powder, coriander powder, red chilli powder, garam masala and salt and mix well.
7. Add green coriander to it and mix.
8. Then make small balls of kneaded dough.
9. Roll each dough thinly with a rolling pin.
10. Place the filling in the middle and fold the edges and give a round shape.
11. Seal the edges well by pressing them with tweezers.
12. Now heat oil in a pan.
13. Fry the shortbread on low flame until it turns golden.
14. Remove extra oil by taking it out on a paper towel.
15. Serve potato-pea shortbread hot with curd, green chutney or sweet chutney. You can also take it for breakfast with tea or for evening snack.

Special tips
1. You can also add other vegetables like carrots, mushrooms etc. to the stuffing as per your choice.
2. To make shortbread more crisp, you can also add a little semolina to the dough.
3. If you want to make shortbread with less oil, you can also bake in the oven.
4. You can prepare shortbread in advance, store it in the fridge and heat it whenever you want and eat it.
