Ingredients for making raw papaya barfi:
Raw papaya, sugar – 2 cups, desi ghee – 2 teaspoons, mawa – 1 cup, chopped dry fruits, food color – pinch
Method to make raw papaya barfi:
Step 1: To make raw papaya barfi, first wash the papaya with water. Wipe it, cut it into two parts and remove the seeds thoroughly. After that peel the papaya and remove its peel. Now grate the papaya.
Step 2: Turn on the gas and place a pan on it. When the pan is hot, add 2 spoons of ghee. Now, add grated papaya and cover. Stir well after some time.
Step 3: After it becomes light soft, add 2 cups of sugar to the papaya. Gradually the sugar will melt in it and the color of papaya will start turning light brown. Then add a pinch of food color in it and mix well.
Step 4: In the next step add mawa and mix well. After some time add cardamom powder to this mixture. Cover and leave on low flame for 10 minutes. Now turn off the gas.
Step 5: Now take a container in the last step and grease it with ghee. Now add papaya mixture to it and spread it evenly. Add dry fruits on top. Keep it for 3 to 4 hours to freeze. After the stipulated time, remove it from the container and cut it into barfi shapes.
