Ingredients for making carrot and ginger soup
1. 4-5 carrots (grated)
2. 1 inch ginger (grated)
3. 1 onion (finely chopped)
4. 2-3 garlic cloves (finely chopped)
5. 1 teaspoon oil
6. 1/2 teaspoon cumin
7. 1/4 teaspoon turmeric powder
8. 1/2 teaspoon coriander powder
9. 1/4 teaspoon red chilli powder
10. Salt as per taste
11. 4 cups water
12. Fresh coriander leaves (finely chopped)

Method to make carrot and ginger soup
1. First of all heat oil in a pan. Add cumin seeds to it and let it crackle. Then add onion and garlic and fry until golden.
2. Now add grated carrots and ginger and fry for 2-3 minutes.
3. Then add turmeric powder, coriander powder, red chilli powder and salt and mix well.
4. After this, add 4 cups of water and let it boil.
5. Now cook on low heat for 15-20 minutes or until the carrots are tender.
6. Then turn off the gas and let the mixture cool and then grind it in a mixer to make a smooth paste.
7. Now put the soup in the pan again and heat it. Garnish with fresh coriander leaves on top and serve.

Special tips
1. You can also add other vegetables like potatoes, peas etc. to this soup as per your choice.
2. If you want to make it more creamy, you can add a little cream or milk to it.
