Carrot pickling ingredients
Carrots – 1 kg
Mustard oil – 1 cup
Red chilli powder – 1 tbsp
Turmeric powder – 1/2 tbsp
Dry mango powder – 1 tbsp
Salt – as per taste

Method of making carrot pickle
Wash, peel and cut the carrots lengthwise.
Add mustard oil, red chilli powder, turmeric powder, dry mango powder and salt in a mixer and grind it.
Put oil in a pan and heat it.
Put carrot pieces in hot oil and fry for a few minutes.
Mix the carrot pieces in the spice mixture and mix well.
Fill the carrot mixture in a jar and cover.
Keep the jar dry for at least a week, so that the taste of the pickles can improve.
Carrot pickle is ready. You can serve it with roti, paratha or rice. Carrot pickle lasts for a long time and can be preserved by keeping it in a refrigerator.
