Ingredients for making chutney
1. 10-12 garlic cloves
2. 4-5 dried red peppers
3. 1 medium chopped tomato
4. 1 teaspoon cumin
5. 1 teaspoon coriander seeds
6. 2-3 tablespoons oil
7. Salt as per taste
8. ½ tsp red chili powder (optional)
9. 1 teaspoon lemon juice (optional)

How to make chutney
1. First of all, peel the garlic cloves and keep them aside.
2. Also, if desired, soak the dried red pepper in warm water for 10-15 minutes to soften it.
3. Now heat a pan on medium flame and add cumin and coriander in it and fry until fragrant.
4. Then let them cool. Now grind them into thick powder with the help of a grinder or mortar.
5. After this, heat oil in the pan and add garlic cloves to it and fry until it turns golden brown.
6. After this add soaked red chilies and chopped tomatoes (if using) and cook until the tomatoes become soft and the oils start separating.
7. Now add roasted cumin and coriander powder, salt and red chili powder (if using). Mix all well and cook for 1-2 minutes.
8. Then let this mixture cool and then mix it in a thick paste with the help of a food processor or blender. If necessary, you can add some water or oil to it.
9. Rajasthani garlic chutney is ready. You can serve it with millet roti, dal bati, paratha or pakoda.
