Make tasty and healthy Vegetable Pulao with this recipe for lunch in minutes

Ingredients for making vegetable Pulao
Basmati rice – 2 cups (washed and soaked)
Oil- 2 tbsp
Onion- 1 large, finely chopped
Garlic- 3-4 cloves, finely chopped
Ginger- 1 inch piece, finely chopped
Carrots-1 large, grated
Peas – 1 cup (frozen or fresh)
Cauliflower-1/2 cup, cut into small flowers
Green chilli-2-3, finely chopped
Yogurt- 1/2 cup
Turmeric powder – 1/2 teaspoon
Coriander powder – 1 tsp
Cumin powder- 1/2 teaspoon
Red chilli powder – 1/4 teaspoon (as per taste)
Garam masala – 1/2 tsp
Salt – as per taste
Water – 3 cups
For tempering:
Oil- 1 tbsp
Cumin – 1/2 teaspoon
Bay leaf – 2
Cinnamon-1 inch piece
Clove- 2-3
Pepper- 4-5
Method of making vegetable pulao
1. First of all, heat oil in a pan and add cumin, bay leaf, cinnamon, cloves and black pepper and fry.
2. Now add onion, garlic and ginger in this pan and fry until it turns golden. Then add carrots, peas, cauliflower and green chillies and fry for a few minutes.
3. After this, add turmeric powder, coriander powder, cumin powder, red chilli powder and garam masala and mix well.
4. Then dissolve the curd in some water and add it to the vegetables and mix well.
5. Now add soaked rice to it and mix well.
6. After this add 3 cups of water on top and add salt as per taste.
7. Now cover the pan with a lid and cook over medium heat for 15-20 minutes or until the rice has melted.
8. Finally, turn off the gas and keep the casserole covered for 5-10 minutes. Then serve it hot.
Special tips
1. You can also add other vegetables as per your choice in Vegetable Pulao like capsicum, brinjal etc.
2. If you want to make pulao more tasty then you can also add raisins, almonds or cashews in it.
3. You can serve vegetable pulao with curd or raita, as it increases the taste manifold.
