Enhance the taste of Dahi-Bhalla with adding this sweet and sour tamarind chutney on Diwali

Lucknow| On the occassion of Diwali lamps are lit in homes and various types of dishes are prepared in collaboration with guests and family members. Apart from sweets, there are many dishes in which tamarind chutney is added, like curd bade, tikkis, pakodas etc. The sweet and sour taste of tamarind sauce (Imli Chutney) makes many dishes even more delicious. Be it chaat, dahi-bhalla or plain curd, tamarind chutney creates its own identity everywhere. In such a situation, you must make tamarind chutney at home on the occasion of Diwali. Here we are going to tell the recipe for making tamarind chutney (Imli Chutney Recipe).

Ingredients for making tamarind chutney
Tamarind- 100 grams (soak and remove the pulp)
Molasses – 100 grams (grated)
Asafoetida-a pinch
Cumin – 1 tsp
Rye- 1/2 teaspoon
Red chili powder – 1/2 teaspoon
Coriander powder – 1 tsp
Turmeric powder – 1/4 teaspoon
Salt – as per taste
Oil- 1 tsp
Garam masala – 1/4 teaspoon (optional)

Method of making tamarind chutney
1. Prepare tamarind – Soak the tamarind in hot water and keep it aside. After about 15-20 minutes, remove the tamarind from the water and remove the pulp.
2. Fry the spices – Heat oil in a pan and add cumin and mustard seeds and let it crackle. Now add asafoetida to it and then add red chilli powder, coriander powder and turmeric powder and fry lightly.
3. Mix all the ingredients – add tamarind pulp, jaggery and salt to the roasted spices and mix well.
4. Add water – Now add water little by little to it and make a thick paste. You can increase or decrease the thickness of chutney as per your choice.
5. Boil – Cook this mixture on low flame until it thickens.
6. Add garam masala – Finally add garam masala and mix well.
7. Cool and serve – Cool the chutney, fill it in an airtight container and store it in the refrigerator. You can serve it with chaat, dahi bhalla, pakodas etc.

Some tips
1. You can also add other spices to tamarind chutney as per your choice such as ginger, garlic or mint.
2. If you want to make chutney sweeter then you can increase the amount of jaggery.
3. If you want to make the chutney more spicy then you can increase the amount of red chilli powder.
